Gluten Free Microwave Mug Banana Bread

This is a super easy yummy snack that is perfect for cold days! An easy breakfast for kids rushing off to school


Banana Bread 1 Minute Microwave Mug Cakes
Ingredients:
1/4 cup ripe mashed banana (around 1/3 banana - 3 inches)
1 TBS maple syrup
1 TBS coconut oil
1/4 tsp pure vanilla extract
3 TBS oat flour
1/4 tsp baking powder
pinch salt
pinch cinnamon
2 TBS blueberries (fresh or frozen)

Instructions:

1. In a microwavable mug, mix together the banana, oil, syrup & vanilla. 
2. Add in flour, baking powder, salt and cinnamon & mix until combined. 
3. Add blueberries on top. 
4. Microwave for 45-55 seconds 
5. Enjoy immediately for breakfast, snack or dessert. 

(if you have a large mug - can double or even triple recipe -add cooking time by 30 sec - 1 min)
